4 large russet potatoes, washed and scrubbed
6 slices bacon, chopped
1/2 cup diced onion
1/2 cup diced bell pepper (any color)
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup chopped green onions
Salt and pepper to taste
