Apple Pecan Cake with Caramel Glaze


1. Preheat the oven to 325°F.

2. In a large mixing bowl, combine the cooking oil, sugar, and eggs. Mix until creamy.

3. In a separate medium mixing bowl, whisk together the flour, baking soda, cinnamon, and salt. Add to the large bowl and mix until well combined.

4. Stir in the vanilla extract, then fold in the chopped apples and pecans until evenly distributed.

5. Pour the batter into a generously greased and floured tube pan, or use two loaf pans if preferred.

6. Bake at 325°F for approximately 1 hour, or until a toothpick inserted into the center comes out clean. Check the cake at around 50 minutes, especially if using loaf pans.

7. While the cake is baking, prepare the caramel glaze. In a small saucepan, melt the butter over low heat.

8. Stir in the brown sugar and milk, then bring to a boil over low heat. Reduce to a simmer, stirring constantly, and let boil for 10 minutes.

9. Remove from heat and stir in the vanilla extract. Let the glaze cool slightly.

10. Once the cake has cooled a bit, pour the caramel glaze over the top of the cake.

11. Allow the cake to cool completely before serving.
