Banana Pudding Cheesecake Squares


Preheat oven to 350°F (175°C).
In a bowl, combine crushed vanilla wafers and melted butter. Press the mixture into the bottom of a 9×13 inch baking dish to form the crust.
In a large mixing bowl, beat the cream cheese until smooth. Add sugar, mashed bananas, and vanilla extract, mixing until well combined.
Beat in the eggs, one at a time, until fully incorporated.
In a separate bowl, whisk together the heavy cream and banana cream pudding mix until smooth. Fold this mixture into the cream cheese batter.
Pour the filling over the crust in the baking dish.
Bake for 40-45 minutes, or until the center is just set and the edges are lightly golden.
Allow to cool completely, then refrigerate for at least 4 hours.
Before serving, top with whipped cream and garnish with additional vanilla wafers.
