Cheesy Hamburger Potato Casserole



1. Preheat the oven to 350°F (175°C).

2. Spray a 9×13-inch baking dish with non-stick cooking spray.

3. In a large skillet, cook the diced onion and ground beef until the meat is browned.

4. Slice the potatoes into about 1/4-inch slices.

5. Layer one-third of the sliced potatoes on the bottom of the baking dish. Sprinkle with salt and pepper.

6. Spread one-third of the cooked meat mixture evenly over the potatoes, then sprinkle one-third of the shredded cheese on top.

7. Repeat the layers with the remaining potatoes, meat mixture, and cheese, ending with a layer of cheese on top.

8. In a bowl, mix together the Cheddar cheese soup mix, milk, and evaporated milk. Add salt and pepper if desired.

9. Pour the soup mixture over the top of the potatoes and beef in the baking dish.

10. Cover the baking dish tightly with aluminum foil and place it in the preheated oven.

11. Bake for one hour.

12. Remove the foil and bake for an additional 15 minutes or until the cheese is golden and bubbly.

13. If the potatoes are thicker, you may need to bake the dish longer.
