Cherry Chocolate Bonbons


Directions:
Chocolate Shells: Melt 300g of dark chocolate and temper it. Coat the molds for the bonbons and let set in the fridge.
Cherry Ganache Filling: Heat the heavy cream until it just begins to simmer. Pour over 200g of chopped dark chocolate and let sit for a minute. Stir until smooth. Mix in the butter until fully incorporated, then fold in the cherry preserves. Chill until set.
Assembly: Fill the chocolate shells with the cherry ganache. Close the bonbons with more tempered chocolate. Chill until set.
Decoration: Once set, unmold the bonbons. Drizzle with melted white chocolate and adorn with freeze-dried cherry pieces and a touch of edible gold leaf.
