Classic Hashbrown Breakfast Casserole


Preheat your oven to 350°F (175°C).
In a skillet, cook the sausage until browned, then add onions and bell peppers, cooking until softened.
In a large mixing bowl, combine the hash browns, cooked sausage mixture, and one cup of cheese.
In another bowl, whisk the eggs with salt and pepper, then pour over the hash brown mixture and mix well.
Transfer to a greased baking dish, sprinkle the remaining cheese on top, and bake for 35-40 minutes or until the casserole is set and the cheese is bubbly.
Let it cool slightly before serving. Garnish if desired.
