Cowboy Meatloaf and Potato Casserole


Directions:
Preheat your oven to 375°F (190°C).
In a large bowl, combine all the ingredients for the meatloaf. Press the mixture into the bottom of a greased baking dish.
Boil the potatoes until tender, about 20 minutes. Drain and mash with milk and butter. Season with salt and pepper.
Spread the mashed potatoes over the meatloaf. Sprinkle with shredded cheddar cheese.
Bake in the preheated oven for 45 minutes, or until the meatloaf is cooked through and the potatoes are golden brown.
