Cream Puffs with Chocolate Glaze

1. Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.
2. Combine butter, water, milk and salt in a saucepan and bring to a boil over medium heat.
3. Remove from heat and quickly add flour until a soft dough forms.
4. Return to low heat and continue stirring the dough for about 2 minutes to dry it out a bit.
5. Transfer the dough to a bowl and let it cool for a few minutes.
6. Beat in the eggs, one at a time, until fully incorporated and batter is smooth.
7. Transfer the dough to a pastry bag fitted with a large round tip.
8. Place small mounds of dough on the prepared baking sheet, leaving space between each one for expansion.
9. Bake for 20-25 minutes or until golden and puffed.
10. Cool completely on a rack.
11. Whip the cream and powdered sugar until stiff peaks form. Add the sour cream.
12. Fill each cooled puff pastry with the cream filling using a pastry bag.
13. Melt the chocolate in a heatproof bowl set over boiling water, stirring until smooth.
14. Dip or drizzle the chocolate over the cream puffs.
15. Let the chocolate glaze set before serving.
