Golden Oreo Strawberry Cheesecake Bars


2. Prepare Strawberry Sauce:
– In a pot, combine the diced strawberries with 1 tablespoon of sugar and 1 tablespoon of water. Bring to a boil, then cover and simmer for 10 minutes until the strawberries are soft, stirring occasionally.
– Combine lemon juice with cornstarch, then stir into the strawberry mixture and simmer for an additional minute until thickened. Transfer the strawberry mixture to a food processor and pulse until smooth. Set aside.

3. **Prepare Cheesecake Filling:
– In a food processor, combine the cream cheese, sour cream, remaining sugar, vanilla extract, and egg. Pulse until smooth and combined.

4.Assemble and Bake:

– Spread the cream cheese mixture over the cooled Oreo crust.
– Pour half of the strawberry sauce over the cheesecake layer. Reserve the remaining sauce for later use.
– Bake at 325°F (160°C) for 36 minutes, or until the cheesecake is just slightly jiggly.

5. Finish and Chill:
– Remove from the oven and let cool on a wire rack.
– Crush the remaining Oreos and sprinkle them on top of the cheesecake bars, gently pressing them into the surface.
– Cover the pan and refrigerate for at least 3 hours, or until the cheesecake is firm enough to cut into squares.
– Once chilled, remove from the pan and cut into squares.
– Serve and enjoy!
