Lasagna Soup



 Instructions
1. Cook the pasta according to the package directions. Drain and drizzle with a bit of olive oil.
2. In a large pot, heat 1 tablespoon of olive oil over medium-high heat. Add the chopped onion and cook until it begins to soften. Add the ground beef, garlic, and oregano, cooking until the meat is browned and fully cooked. Stir in the tomato paste and cook for about 2 minutes.
3. Pour in the chicken broth, crushed tomatoes, and 1 cup of water. Cover and bring to a simmer. Uncover and cook until slightly reduced, about 10 minutes. Stir in the cooked noodles, fresh basil, grated parmesan, and heavy cream. Simmer for an additional 2 minutes.
4. Serve the soup in bowls, garnishing with chopped basil, ricotta cheese, and additional parmesan if desired.
