Lemon Blueberry Bread


Preheat oven: Set to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
Mix dry ingredients: In a bowl, whisk together flour, baking powder, and salt.
Combine wet ingredients: In a separate bowl, beat together sugar, eggs, milk, oil, vanilla, lemon zest, and lemon juice.
Combine mixtures: Add the dry ingredients to the wet, mixing just until incorporated. Gently fold in the blueberries.
Bake: Pour batter into the prepared pan. Bake for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Cool and serve: Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
