To make crust: Finely crush Oreo cookies in a food processor, add melted butter, and blend until moistened. Press onto the bottom of a greased 9-inch springform pan and freeze.
For the filling: Melt bittersweet chocolate; let cool. Mix cream cheese and powdered sugar until smooth. Whip heavy cream to soft peaks and combine with cream cheese mixture. Divide into two, add orange zest, extract, and food coloring to one half, and spread over crust. Mix melted chocolate into the other half and layer over the orange mixture. Chill 3-4 hours.
For the topping: Heat heavy cream, pour over chocolate, stir until smooth, and spread over chilled cheesecake. Garnish as desired.
