Orange Creamsicle Cake


Directions:
Cake: Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans. In a large bowl, combine cake mix, orange juice, oil, eggs, and orange zest. Beat on medium speed until well mixed. Pour batter into prepared pans. Bake for 28-30 minutes or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
Creamsicle Frosting: In a bowl, beat butter until creamy. Gradually add powdered sugar, orange juice, and vanilla extract. Beat until smooth and fluffy. Stir in orange zest.
Orange Cream Filling: In a small bowl, whisk together pudding mix and milk until smooth. Stir in orange zest. Fold in whipped topping until well combined.
Assembly: Place one cake layer on a serving plate. Spread the orange cream filling over the cake. Top with the second cake layer. Frost the top and sides of the cake with creamsicle frosting.
Decorating: Garnish with additional orange zest and, if desired, orange slices.
