Tender pancakes without eggs and milk: they come out thin and soft!

Cake:
Mix the flour with the baking soda, salt and sugar.
Gradually add the sparkling water and 3 tablespoons. vegetable oil.
Mix thoroughly until smooth and set aside for a few minutes.

Pancake frying:
Heat a pan and brush it with vegetable oil.
Pour in a portion of the batter and spread it evenly over the pan.
Sprinkle with potato and onion mixture.
Once the bottom of the pancake is browned, turn it over and fry it.

The final touch:
Fold the finished pancakes into triangles and cover with a lid or cling film to keep them warm.

Additional tips for filling:

For a richer flavor, you can add finely chopped fresh herbs or a few hard-boiled eggs.
If you want to add a little spice, use hard cheese. Once the pancake is fried on both sides, place a few cubes of cheese on the filling, roll into a triangle and place all the pancakes in a casserole dish. Place in an oven preheated to 180°C and bake for 10 minutes, until the cheese is melted.
